Ingredients

1 (15-ounce) can Michigan Pinto Beans, rinsed and drained
2 tablespoons olive oil
1 teaspoon chili powder
Pinch of chili flakes
Zest and juice of 1 lime
1/2 teaspoon salt
1/2 teaspoon pepper

Cooking Instructions

  1. Rinse and drain a can of pinto beans. Lay out the beans on a cooking sheet over a paper towel to help dry up the extra water. Allow the beans to sit out on the counter for about an hour to allow the beans to dry out. The dryer the beans are, the better the crisp you’ll get.
  2. Remove the paper towel, and toss the beans with oil, chili powder, chili flakes, salt, and pepper.
  3. Roast at 425°F for 15 minutes, or until lightly crisp
  4. Remove from the oven and toss with lime zest and a squeeze of fresh lime juice before serving.
