INGREDIENTS

  • 1 cup dry Adzuki Beans
  • 1-1/4 cups dried apples, chopped
  • 2/3 cup raisins or dried cherries
  • 1/3 cup honey
  • 1/2 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • Vanilla ice cream

PREPARATION

  1. Rinse the Adzuki Beans.
  2. Simmer in 3 cups of water for 1-1/2 hours.
  3. Drain, reserving liquid.
  4. Mix apples and raisins with 1-1/2 cups of the reserved bean liquid.
  5. Let stand for 15 minutes.
  6. Place beans in a nonstick saucepan.
  7. Add fruit mixture, honey, and cinnamon.
  8. Cover and simmer for 6 to 8 minutes.
  9. Stir in the lemon juice an serve warm over vanilla ice cream.
