INGREDIENTS
- 1 cup dry Adzuki Beans
- 1-1/4 cups dried apples, chopped
- 2/3 cup raisins or dried cherries
- 1/3 cup honey
- 1/2 teaspoon cinnamon
- 1 teaspoon lemon juice
- Vanilla ice cream
PREPARATION
- Rinse the Adzuki Beans.
- Simmer in 3 cups of water for 1-1/2 hours.
- Drain, reserving liquid.
- Mix apples and raisins with 1-1/2 cups of the reserved bean liquid.
- Let stand for 15 minutes.
- Place beans in a nonstick saucepan.
- Add fruit mixture, honey, and cinnamon.
- Cover and simmer for 6 to 8 minutes.
- Stir in the lemon juice an serve warm over vanilla ice cream.
