This Michigan Black Bean Brownie recipe is the best! The whole family will enjoy the healthy chocolatey goodness that’s both gluten & dairy-free!

Ingredients

1 (15.5 ounce) can Michigan Black Beans, rinsed and drained, or 1-1/2 cups cooked dried beans
2 large eggs
1/2 cup cocoa powder
1/2 cup maple syrup
1 teaspoon coconut oil
1 Tablespoon almond milk
1 teaspoon balsamic vinegar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon espresso powder
1/2 teaspoon vanilla extract
1 cup dark chocolate chips, divided

Cooking Instructions

  1. Preheat the oven to 350°F.
  2. Grease a nonstick 9 x 9-inch square baking pan with baking spray and line with parchment paper.
  3. Blend the black beans, eggs, cocoa powder, maple syrup, oil, almond milk, balsamic, baking soda, baking powder, espresso, and vanilla in the blender until smooth and pour into a bowl.
  4. Fold in 3/4 cup chocolate chips until combined.
  5. Pour the brownie batter into the prepared pan. Sprinkle the remaining chocolate chips evenly over the top of the brownies.
  6. Bake the brownies until a toothpick comes out clean, about 30 to 32 minutes.
  7. Allow the brownies to cool completely before slicing them into squares.
